CHICKEN, KALE & GARBANZO SOUP

Ingredients

olive oil
1 tbsp.
onion, chopped

1.5 inch ginger, sliced
cloves garlic, mashed

chicken broth
10 cups
cilantro spigs

ground turmeric
1 tsp.
coriander
1 tsp.
smoked paprika
1 tsp.
potatoes, cubed
6
carrots, chopped
4
garbanzos, drained
1 can
chicken meat, shredded
bunch of kale, shredded

salt

Easy Directions

  1. n a large pot heat oil and cook onion and ginger until onion is soft.
  2. Add garlic and cook for 2 minutes.
  3. Add dry spices and stir for 1 minute.
  4. Add chicken broth, potatoes, carrots and cilantro and simmer for 15 minutes or until vegetables are cooked through.
  5. Add chicken, garbanzos and kale and simmer for an additional 5 minutes.
