Queso Fundido con Chorizo

Savory chorizo and melted Monterey Jack come together in this classic queso fundido — baked until bubbly and served with warm tortillas for dipping.

Ingredients

9 oz. El Mexicano® pork chorizo
1/4 of a white onion, chopped into small cubes
6 flour tortillas
1/2 lb. grated Monterey Jack cheese
1/2 tsp. olive oil

Directions

1. In a skillet, heat the olive oil.

2. Add the chorizo and fry for about one minute or until it releases some fat.

3. Add the onion. Mix well and cook for 3 minutes or until the chorizo is slightly cooked. Set aside.

4. Place the cheese in an oven-safe dish.

5. Add the chorizo mixture over the cheese.

6. Bake for 10 minutes or until the cheese is melted.

7. Serve with flour tortillas.
