Frijoles Charros con Cecina

Charro Beans with Cecina

A traditional recipe from northern Mexico, these hearty charro beans are a must-try! Featuring a cecina and longaniza combo, bright tomato, and fiery árbol chile, this recipe is a perfect main or side

Ingredients

5 pieces cecina
1.1 lbs longaniza
1 cup bacon (finely chopped)
1 cup white onion (finely chopped)
2 cloves garlic (finely chopped)
1/4 cup árbol chile (finely chopped)
1 cup tomato cut into small-sized cubes
2.2 lbs cooked pinto beans
1/4 cup sliced serrano chiles
1/4 cup white onion (thinly sliced)
Pork rinds for serving

Directions

1. Preheat grill 45 minutes before using. Place cecina and longaniza directly on grill grate and cook for a couple of minutes. Remove from grill and set aside.
2. Chop cecina and slice longaniza. Set aside.
3. In a hot skillet, cook bacon until golden brown and some fat has begun to render out. Add onion and garlic and cook until translucent. Add árbol chile and tomato and cook 5 more minutes.
4. Add pinto beans, pinto bean broth, chopped cecina, and sliced longaniza and cook for a couple of minutes more.
5. Serve charro beans with chile serrano, cebolla, and pork rinds on the side.
