Mexican Nopales Salad

A staple in traditional Mexican cuisine, cactus leaves salad is a fresh and healthy meal solution or an appetizing side dish. This salad is a perfect combination of aromas, colors, and flavors, and is easy to prepare.

Ingredients

• 6-8 fresh cactus paddles, cleaned
• 1 white onion, diced
• 2 tomatoes, diced
• ¾ cup of panela cheese, cut in cubes
• Cilantro
• Oregano leaf powder
• Salt

Directions

1. Wash and dice cactus paddles into rectangular pieces. Place diced cactus in a bowl with water and salt. Let them sit for half an hour, then rinse and drain.
2. Boil cactus in pot with water and vinegar.
3. Remove cactus from pot once they’ve reached desired consistency, and drain.
4. Mix cactus with onion, tomato, cheese, and cilantro. Season with salt and oregano lead powder.
