Pibil-Style Beef Rib Steaks

Featuring a bright pibil marinade, these beef rib steaks are a must-try! This Mexican grill wonder is best served with pickled red onions with Habanero chile. You’ll love the tasty combo!

Ingredients

Pilbil Marinade Ingredients:

1/4 cup annatto
1/2 cup orange juice
1/4 cup white vinegar
1/2 piece white onion
5 cloves garlic
5 pieces allspice
2 pieces Guajillo chile seeds and veins removed, and soaked in hot water
1 tablespoon oregano
1 tablespoon cumin
1 piece tomato roasted
1 tablespoon salt
1 teaspoon cloves
2.2 pounds beef rib steak

Pickled red onions with habanero chile Ingredients:

2 pieces red onion thinly sliced
1/2 cup orange juice
1/2 cup lime juice
¼ cup white vinegar
2 pieces Habanero chile thinly sliced
1 teaspoon oregano
1 teaspoon salt

Cilantro for garnish

Directions

1. For the pibil marinade: In a blender, combine annatto, orange juice, white vinegar, white onion, garlic, allspice berries, soaked guajillo chile, oregano, cumin, tomato, salt and cloves. Blend until smooth.
2. Pour pibil marinade over beef rib steaks and let marinate for 30 minutes.
3. For the pickled red onions with Habanero chile: In a bowl, combine red onion, orange juice, lime juice, white vinegar, and Habanero chile. Season with salt and pepper and set aside.
4. Preheat grill for 45 minutes before using. Remember to set up your grill for direct and indirect heart. Sear beef rib steaks over direct heat for 5 minutes per side. Transfer to indirect heat, cover grill, and cook for 20 more minutes. Constantly brush beef rib steaks with pibil marinade.
5. Remove from grill and let rest for 15 minutes.
6. Serve pibil-style beef rib steaks with cilantro, red onion, and Habanero salsa on the side.
