Seafood Tower

A Torre de Mariscos, or “tower of seafood,” is a delightful and impressive dish showcasing the sea’s bounty. This culinary masterpiece features layers of succulent seafood, such as shrimp, scallops, and octupus, along with fresh veggies and a zesty sauce. It’s a perfect meal for seafood lovers during the Lenten season.

Ingredients

2 cups lime juice
1 cup Worcestershire sauce
1 cup soy sauce
2 cups tomato clam juice
1 cup extra hot sauce
Salt
Pepper
3 cups shrimp (raw and deveined)
2 cups scallop
2 cups cucumber (sliced)
2 cups red onion (thinly sliced)
2 cups medium-sized shrimp (cooked)
2 cups octopus (cooked, cut into medium-sized cubes)
avocado (sliced, for garnish)
red onion (thinly sliced, for garnish)
Northgate® Tostadas (for serving)

Directions

1. In a bowl, combine lime juice, Worcestershire sauce, soy sauce, tomato clam juice, extra hot sauce, salt, and pepper. Divide into two equal portions and set aside.
2. Place shrimp in a bowl and place scallops in another bowl. Pour previous mixture into both bowls and set aside.
3. On a plate, place a ring mold. Add a layer of cucumber slices and top with a layer of thinly sliced red onion. Add a layer of shrimp and top with a layer of scallops. Add a layer of medium-sized shrimp and top with a layer of cooked octopus. Repeat until the ring mold is full.
4. Garnish with avocado slices and thinly sliced red onion. Gently unmold seafood tower, pour with sauce mixture and serve with Northgate® Tostadas on the side.
