Tamal Norteño de Puerco

Here’s a step-by-step recipe on how to make the fluffiest pork tamales norteños, they are finger-licking good!

2 lbs Northgate Market® Tamal Masa
1 lb pork
2 cloves garlic (for cooking the pork)
¼ onion (for cooking the pork)
1 tsp thyme(for cooking the pork)
Salt (for cooking the pork)
Pepper (for cooking the pork)
4 guajillo chiles
2 morita chiles
2 ancho chiles
1 lb tomatoes
1 clove garlic
¼ onion
1/2 cup pork broth

In a pot over medium high heat, heat water. Add pork, garlic, onion, thyme, salt, and pepper. Cook until pork is tender. Remove from heat and set pork broth aside. Let pork cool, shred, and set aside.
In a blender, combine chiles, tomato, garlic, onion, pork broth, salt, and pepper. Blend until smooth. In a large skillet, heat oil. Pour in adobo and bring to a boil. Season to taste. Add pork and cook for 2 more minutes.
On each corn husk, spread Northgate Market® Tamal Masa and top with pork adobo. Fold the end of the corn husk toward the center to close each tamal. Repeat until all the ingredients are used up.
In a steamer, steam tamales over medium-high heat for 40 minutes or until cooked through.
Serve tamales with extra adobo on top.
