Flap Meat (Ranchera Meat)

whole red onion, diced

Smoked chipotle peppers in abobo sauce
1 can (7 ounce)
whole orange zest, juice

dark brown sugar

limes zest, juice

fresh cilantro roughly chopped
1/2 bunch
extra virgin olive oil
1/2 Cup
salt and pepper

Easy Directions

Preparation:

Day before grilling:

  1. In a blender, mix lime juice, pineapple juice, orange juice, garlic, 1-cup brown sugar, red onion and a few chipotle peppers, to taste.
  2. Pour in a large bowl.
  3. Stir in rest of the brown sugar, cilantro, olive oil, lime zest, orange zest, and season with salt and black pepper to taste.
  4. Add a little more salt than you would normally so it can penetrate deeper into the meat.
  5. Marinate meat in one gallon size GLAD® Storage Bag.
  6. Refrigerate until the next day.

Grilling:

  1. Heat the charcoal according to the directions and carefully place the marinated beef on the grill.
  2. Cook evenly on both sides until desired doneness is reached.
  3. Remove, slice and serve.
